So I'm doing a full system detox/cleanse right now which means no gluten, meat, dairy, soy, corn, or sugars. I have a beautiful eggplant in the fridge, and am looking for suggestions on what to do with it.

What are your favorite gluten-free eggplant recipes?

Imam Fainted! My god, unbelievable. Apparently it's similar to ratatouille, although it's Turkish instead of French.

There's a bunch of recipes for it on Food Blog Search, although I don't know which ones are decent. I'm emailing my grandmother to ask for the recipe, as I've been craving it. Once I get it, I'll post it.

(Also, you may want to x-post this to celiac and coeliac_recipes. They are much more active communities.)

wewll i go the italian route.
you could peel it and thinly slice it and just dip it in beaten egg,and fry it up..or layer it in a pan with lovely marinara sauce, and bake it.
some peeps do this and then use the egg plant like the noodles for a lasagna.

you can make sall kinds of variations with it,and you dont have to use the cheeze at all .
I like it myself ,but thats me.there is also this awesome chinese style recipe,but i think it might use flour ..
I will look for it .
