I saw these on Joyful Abode
yesterday and they looked like a perfect recipe to try this weekend. When I went to get the recipe this morning, the website was down. I consulted google and came up with this recipe instead.
Here is my adaption:
In a large bowl combine:
1 1/4 C GF Oats
1 cup plain yogurt, unsweetened
1 cup milk or plain soymilk
1 tsp. raw sugar (omit if soymilk or yogurt are sweetened)
1/4 c Bobs Redmill GF all purpose flour
1 scant tsp. salt
1 tsp. baking soda
Add and mix well:
2 large eggs, beaten
1 T vanilla extract
1/4 cup chopped walnuts
I let the mix sit for about 10 minutes before cooking to let the oatmeal soak up some of the moisture. This batter is very runny, but it firms up while cooking. The combination of oats and walnuts was wonderful and I will definitely be making these again.
Edit 4/20/09: These are even better if you make them a day ahead of time and let the oats soak up the moisture from the batter in the refrigerator.
