Hello!

I am a gluten intolerant twenty one year old female college student living in Tucson, AZ. For my cultural anthropology class I have chosen to do my semester research project on those who are gluten intolerant and how they create identity for themselves. I would be so grateful if you (or anybody you know that you could forward this to) found the time to fill out this questionnaire and consent form for me. I've been reading Gluten Free Girl for a year or two now and really enjoy reading this site. She writes well, has a nice variety of recipes and great photography. She has a book out that I haven't purchased yet, but it's on my wish list.

I saw these on Joyful Abode yesterday and they looked like a perfect recipe to try this weekend. When I went to get the recipe this morning, the website was down. I consulted google and came up with this recipe instead. Here is my adaption:

Edit 4/20/09: These are even better if you make them a day ahead of time and let the oats soak up the moisture from the batter in the refrigerator.

I know that some days you just get tired of cooking and may want to go out to eat. Last night we went to Margaritas and I was impressed, I told them I couldn't have gluten or dairy and the manager came out to talk to me, and made sure the meal was gluten and dairy free offering substituions and cooking the veggies in oil rather than butter. Apparently this is standard procedure and they know what they are doing.

I have been eating Food of Life Brown Rice bread which is good but a bit expensive.   I was curious if anyone has a good gluten and dairy free bread recipe they wouldn't mind sharing.

Does anyone have any sandwich alternative ideas for peanut butter or jam (jelly)? I'm still quite new to gluten free bread (it's just not the same! I miss my Freya's Soy and Linseed!), and I'd like to take a break from bread completely for a few months. The trouble is, I love peanut butter and jam at breakfast, and I need an alternative way to eat them.

Any creative ideas out there? All I can think of is maybe onigiri?

I was hoping to make some pre-made meals and keep them in the freezer, I have made a bunch of soups, now I would like to try some savory pies and maybe some ravaoli.     I am gluten free and dairy free  so it is a bit tricky.   Anyone have any experience of making such things and baking them?

So I'm doing a full system detox/cleanse right now which means no gluten, meat, dairy, soy, corn, or sugars. I have a beautiful eggplant in the fridge, and am looking for suggestions on what to do with it.

What are your favorite gluten-free eggplant recipes?

I've had fibromyalgia for the past 10 years, and although the pain issues are pretty under control these days, the fog has recently shown up with a vengance. (Like, to the point where I sometimes make no sense when I speak, because I switch words and letters around, and make mistakes at work...) It appears that a lot of people with fibro have found relief from the fog by going gluten-free. I've considered this a few times, but I always gave up because the whole process is just so overwhelming. The cookbooks that I checked out from the library were filled with recipes that seemed to be in another language.

How does one get started in adopting a gluten-free lifestyle? How do you learn the lingo? And where can you find the foods? And, of course, is it possible to go gluten free without having to double your grocery budget? I'm pushing my limit as it is, and as much as I want to do this, I don't know if it's financially feasible.
